Staci’s Chocolate Covered Cherry Cookies

Don’t these just SOUND like Christmas?  I gotta say: I’ve been working hard to get my mindset to change.  I’ve been stuck in the mindset of eating.  Constantly.

I’ve been gradually making progress, but it all went to h-e-eck-eck last night at Bunco.  Everyone brought a food item that they were grateful for.  I took homemade bread because I love it above anything.

What’s more, she brought an extra copy of the RECIPE. And after eating (seriously) three of them, she gave it to me. I don’t even like cherries and I pretty much ate half of what she brought. I brought the other half home with me on a plate. You know, to “share with my family.”

You’re Going to Need:
24 Maraschino Cherries
1/2 C. Butter
3/4 C. packed brown sugar
1 Tbsp. Maraschino cherry juice
1 tsp. vanilla extract
1 1/2 C. All-Purpose Flour
1/8 tsp. salt
1 C. Milk Chocolate Chips, divided
1/2 tsp. Shortening

Pat cherries with paper towels to remove excess moisture; set aside. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in cherry juice and vanilla. Combine flour and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 1 hour or until dough is easy to handle.
Insert a chocolate chip into each maraschino cherry. Wrap a tablespoon of dough around each cherry. Place 1 inch apart on ungreased baking sheets.
Bake at 350 degrees for 15-17 minutes or until set and edges are lightly browned.
In a microwave, melt remaining chips and shortening; stir until smooth. Dip tops of cookies in melted chocolate; allow excess to drip off. Place on wax paper; let stand until set. Store in airtight container.

**Before I go, I have to say that I can never say “maraschino cherry” without thinking of Marty Maraschino on Grease. “Maraschino… like the cherry.”**
